Marbella, 18th February 2025 – More than four decades after making history as the first restaurant on the Costa del Sol to receive a Michelin Star, La Fonda is reborn as a gastronomic reference in Andalusia. This exclusive boutique hotel, distinguished with the Relais & Châteaux seal of approval, is once again at the culinary forefront. Under the direction of chef Jorge González Carmona, its gastronomic proposal is based on respect for zero-kilometre and seasonal products, combining tradition and creativity in each dish.
With a distinguished career at establishments such as the Hotel Ritz in Madrid and Robuchon, González Carmona has arrived in Marbella with a clear mission: to recover La Fonda’s prestige on the international culinary scene.

La Fonda’s gastronomic proposal maintains the Andalusian and Mediterranean soul, but with a global and refined approach. Dishes such as the twice-cooked pigeon with corn cream and red endive sauce, the beef tenderloin tataki with seasonal mushrooms and sweet and sour soy sauce, or the grilled scallops with black truffle and fake risotto with payoyo cheese cream are just a sample of González Carmona’s creative talent.
One restaurant, one menu and three unique culinary spaces
Located in a building with centuries of history, the restaurant opens its doors for dinners from Tuesday to Saturday, with an average ticket price of 80 euros and live music. Its gastronomic proposal is articulated in three different spaces, each with its own identity, designed to offer an exclusive culinary experience.
– La Fonda Restaurant, where the essence of culinary luxury can be felt and where diners can taste emblematic dishes such as the sea bass supreme in green sauce with squid and courgette tagliatelle, the carabinero carpaccio with its coral oil and sesame tuile, or the Friesian beef cutlet.
– Los Patios, a spectacular interior courtyard steeped in history, ideal for outdoor dining with the charm of the old town.
– La Ermita, a magical space that was part of the 16th century chapel of San Sebastián.

The Skybar and La Bodega de La Fonda: Two experiences that complete the offer
On the rooftop of the hotel, La Fonda’s Skybar offers one of the most spectacular views of Marbella’s Old Town. An elegant and relaxed space where you can enjoy signature cocktails while the sun sets over the city.
Opposite the hotel, in the picturesque Plaza del Santo Cristo, is La Bodega de La Fonda, a cosy space that honors the traditional cuisine with tapas and homemade dishes such as Spanish omelette, creamy croquettes, meatballs in their gravy, Russian salad and scrambled eggs with Iberian ham.
